Besos, Besitos or Yo-yos • Jessica Dee
Two sugary dome cookies with a jam center. Typically referred as besos, the kissing cookies. This recipe makes 20 pieces, 10 cookies.
- 1 small cookie dough scooper
- 500 g All Purpose Flour
- 200 g granulated sugar
- 2 small eggs
- 250 g unsalted butter room temp
- 20 g instant yeast
- 1/8 tsp salt
- 5 TBS milk
- 1/2 stick of butter for brushing cookie
- fine sugar for coating cookie
- sweetened coconut shavings for coating (optional)
- jam of choice for filling
- Preheat oven to 370 °FLine a large cookie sheet with parchment paper. Mix butter and granulated sugar until there’s a smooth texture. Once integrated, add the eggs. Then add milk a little at a time. Combine.Gradually add flour, yeast, salt. Combine ingredients until you get a cookie dough consistency. Use a small cookie dough scooper or 2 TBS measuring spoon to scoop cookie dough. Place equal dough pieces on the parchment lined cookie sheet. Bake for 20 minutes or until golden brown. Remove and let cool before adding jam. Grab two cookies. Add 1 tsp of jam on bottom half. Place other cookie on top and gently press to bring the cookies together. Repeat with rest of cookies. Brush entire cookie with softened butter and cover entire cookie in fine sugar and/or coconut. They’re ready to eat!
- You can use filling or jam of choice.
- I measure most ingredients by weight.
- You can make cookies bigger; you’ll have to adjust time in oven.
